At that point, whole milk seems much too thick, a bit like paint. At first, most people find that skim milk seems watery and unpalatable, but in a few weeks they adjust. Their experience was rather like people who switch from whole milk to skim. They came to appreciate subtle flavors and began to really enjoy the new foods. However, they also found that their tastes changed. They had to learn new ways of thinking about food and new cooking techniques, and it took about six weeks for them to feel really comfortable with them. At first, the vegetarian group did grumble a bit about their diet. The results were revealing.

We interviewed all the subjects in both original groups, using quantitative measures of how well the subjects liked the food, how much effort was required to prepare it, how their families reacted, whether they would prefer the diet or prescription drugs, and whether they planned to stick with the new foods in the future. I examined that question in a study with Dr. Ornish and his colleague Dr. Larry Scherwitz. When these results first appeared, some questioned how easy it was to follow this kind of diet, saying it really didn't matter how well it worked if it was too arduous. They also lost weight-more than twenty pounds, on average-and felt more energetic than they had in years. Within a matter of weeks, in fact, the pain diminished and eventually disappeared. Their chest pain went away long before the year was up. Their artery blockages shrank simply by using vegetarian foods, along with mild regular exercise, stress management, and no smoking. They were actually starting to clean themselves out, so much so that the difference was clearly visible in 82 percent of patients in the first year: This wonderful result was achieved without medications or surgery. When their angiograms were put on the viewing screen and their blockages were measured, it was clear that something new was happening in their arteries. In fact, the average patient was actually worse off after a year than at the beginning of the study.

The patients in the first group, who had been eating skinless chicken breast and fish day after day, were not getting better. The findings made medical history. The second group, however, had a completely different experience. Regrettably, these results confirmed that the old-fashioned "heart diet" is simply too weak to stop artery blockages from progressing. Their artery blockages were continuing to grow, even though they had followed their doctors' advice.
